these no bake 4 ingredient brownie batter bars were one of my first recipes to ever go viral! and to this day i still get remake pics of these bars in ur kitchen and nothing warms my heart more <3. these are perfect for when you're craving a sweet treat but absolutely do not want to turn the oven on. they're decadent, rich, chocolatey, and taste like brownie batter but you only need four ingredients, a food processor, and about 10 minutes of your time.

i created these one night when i wanted a decadent chocolatey dessert after dinner but with minimal ingredients and minimal time. once i figured out that almond flour and cacao and maple syrup mixed together tastes wildly better and richer than you'd ever think it would, i couldn't stop making them. i've been making some version of this recipe for years and i love using it as a base in other recipes too like my viral no bake blueberry chocolate bars. it really is a staple recipe in my household!

the brownie batter is mainly made from almond flour, which is naturally rich in healthy fats, plant-based protein, and vitamin E. it gives the bars a satisfying density that makes them so filling for a dessert of this size. combined with the cacao powder, you get a healthy dose of magnesium and antioxidants, particularly polyphenols, which are compounds associated with supporting cardiovascular health and reducing inflammation. these brownie batter bars taste very indulgent but they pack a punch nutritionally too! calorie wise they will be denser due to the almond flour but you can reduce the serving size if needed, this also means that they are more satiating than other flours and less feels like more which is why the recipe is intentionally small batch.

i love this recipe because it truly is so forgiving and you can't really mess it up. if it's not coming together add a little more maple syrup or dates and if it's too wet add a touch more cacao powder or almond flour. although this recipe is pretty much foolproof it never hurts to do a lil troubleshooting beforehand: 1) use a high power food processor instead of a blender. this recipe has a higher ratio of dry ingredients to wet because the speed of the food processor releases the natural oils in the almond flour which helps the batter come together. a blender normally doesn't have the same power and results in crumblier bars. 2) opt for fresh fine almond flour instead of coarse almond flour for the best results and texture.

more on the texture: it is very fudgy and chewy, almost like the inside of an underbaked brownie which is exactly the goal for a brownie batter recipe. to get the bars to slice cleanly rather than crumble, press the mixture firmly into your container and make sure it's gone into the freezer for at least 20 minutes before you try to cut it. i use the back of a spoon and then a spatula to press it down as tightly as possible and to make sure it's level. then i drizzle the melted dark chocolate and coconut oil mixture and spread. once set it becomes a glossy double chocolate layer with a satisfying crunch. the contrast between the set chocolate topping and the soft and chewy brownie batter dough is perfection. finally, top with a sprinkle of sea salt which is non-negotiable. it breaks the sweetness perfectly and complements the rich cacao flavour, so don't skip it pretty pls!
