let's talk cinnamon for a second. the type of cinnamon you use actually matters more than you would think. there are 2 types of cinnamon: ceylon or cassia. cassia is easier to find in most supermarkets but from a nutritional stand point it is no match against ceylon cinnamon. there is a compound in cinnamon (called coumarin) and it has surprisingly been found to have toxic effects in humans if you consume it frequently. this compound is 250 times higher in cassia vs ceylon cinnamon. so opt for ceylon cinnamon if you are going to be using it a lot this autumn season. toxic side apart lol, there are so many benefits of cinnamon that can range from blood sugar regulation, high antioxidant count, to strong anti-inflammatory and anti-microbial properties.

the dates add a gentle natural sweetness and are also packed with fibre, iron, and potassium. they blend completely smooth so you'd never know they're in there. i have opted for 2 kinds of sweeteners in this recipe: the dates and the maple syrup and they both play different roles. although both are adding sweetness to these blended cinnamon roll overnight oats, the dates are providing a richer flavour profile. they bring that caramel brown sugar richness that makes these overnight oats taste as close to the real deal as possible. then the maple syrup is really there just to provide sweetness which is why there is range depending on ur preference, you can just do 1 tablespoon or more, taste as you go!
