  • Step 1: Preheat the oven to 170°C/160°C fan.
  • Step 2: In a small bowl, crack the eggs, add the melted coconut oil and vanilla. Whisk until combined.
  • Step 3: Add in the oats, flour and baking powder and fold until just combined.
  • Step 4: Pour in the frozen blueberries and fold until evenly distributed through the batter. It should be almost equal amounts blueberries to batter.
  • Step 5: Spoon onto a lined baking tray.
  • Step 6: Bake for 15 to 20 minutes until the edges are golden brown.
