No Bake Lemon Bars (buttery, refreshing 10-minute summer dessert)

these no bake lemon bars are one of my all-time favourite summer desserts and they seem to be a hit with you all too which makes me so happy! they're incredibly simple to make; all you need is about 10 minutes and a food processor or high-powered blender.

i love a lemon dessert all year round tbh but in the summer and during heatwaves they are my ideal dessert. lemon in desserts has a way of tasting both light and indulgent at the same time which is a combination that feels very refreshing in the heat. the tartness of fresh lemon cuts through the richness of whatever fat you're using, and because the flavour is so bright it never feels heavy even when you're eating something denser and more indulgent.

the first time i made these lemon bars, i ended up making them every week for the next month (lol). they're truly the most refreshing dessert for those sunny days when it's too hot to turn the oven on but your sweet tooth is still calling.

in this recipe, i use both lemon juice and zest for maximum lemon flavour. honestly, the zest is providing more of the lemon flavour than the juice. to make sure you are getting the most flavour from your lemons make sure to opt for unwaxed and organic lemons when possible. the wax coating that is given to waxed lemons will interfere with the lemon flavour significantly. since the citrus flavour of the lemon lives in the oil glands of the peel, this peel gets coated with wax meaning you will just be zesting wax and pesticides in your lemon bars with minimal lemon flavour!

the lemon juice adds acidity and a bit of lemon flavour but the zest is where all the essential oils live and where that intensely fragrant, citrus flavour comes from. don't skip the zest and don't be shy with it either lol.

the best way i like to think of these lemon bars (since they aren't like the traditional baked lemon bars) is like a lemon bar cookie dough concoction. the texture just works so well, it's soft and chewy but still got that dense feeling of cookie dough.

we are using a mix of almond flour and oat flour which combined with the butter gives these no bake lemon bars an almost shortbread-like quality once it sets in the freezer. the almond flour gives it richness and that slight nuttiness, and the oat flour adds a bit more structure so the base holds its shape when you slice it. both flours are completely safe to eat raw/uncooked making them ideal for a no bake treat. a lot of no bake bar recipes use a date and nut base but i prefer this version because it's less sticky and slices so much more cleanly. thanks to the almond flour and oat flour, these bars are naturally gluten free. just make sure to get certified gluten free oats if you have a gluten allergy. they also contain healthy fats and a little extra protein, which helps make them more balanced and satisfying than traditional lemon desserts.

the method is super simple since it's essentially just a one layer bar minus the optional melted chocolate layer. you just add all the ingredients into a food processor and ensure you press down the batter very firmly into the container you are using. i like using a small glass meal prep container as it makes storage easier and it is the perfect size for these small batch no bake lemon bars.

some extra tips for the method: scrape down the sides of the food processor as you go to ensure everything is combined properly and you don't get any pockets of flour or lemon zest. the beauty of no bake desserts is that you can taste as you go, so once it's blended, you taste it and adjust to your preference. since lemons vary so much in their tartness and the amount of juice you get from each one you can trust your palate over the exact measurements. add a bit more lemon if you'd like to or maybe add a touch more maple syrup if needed.

texture tip: these bars are best at around the 10 minute mark after coming out of the freezer, not straight from frozen and not fully room temperature. straight from the freezer they're quite firm and a little icy which mutes the lemon flavour slightly. after 10 minutes the filling softens just enough to get that chewy texture while still being cold and refreshing. i always slice the whole batch before freezing too because trying to cut through a frozen bar is a workout no one asked for. you can also store them in the fridge instead of the freezer.

The fresh lemon zest in this recipe is especially important for flavour (it's where a lot of that bright, citrusy punch comes from) and you won't get that from a bottle. If you can, always use fresh.

Why are my no bake lemon bars crumbly?

If the bars are crumbling when you try to slice them, they may need more time in the freezer to set fully. Make sure they've been freezing for at least 40 minutes. Another common cause is that the mixture wasn't pressed firmly enough into the pan. Use the back of a spoon or the bottom of a glass to press it down as firmly as possible before freezing. The butter and maple syrup act as the binder, so also double check you used the right amounts.

Can I add toppings to these no bake lemon bars?

Yes, definitely! These bars are wonderful topped with melted white chocolate (as the recipe suggests) and fresh lemon zest, but you can also add a dusting of powdered freeze-dried lemon, a drizzle of refined sugar free white chocolate, or a light sprinkle of flaky sea salt for contrast.
